Preheat your oven to 150°C (300°F).
Heat the heavy cream in a saucepan over medium heat until it starts to simmer gently—avoid boiling.
Remove from heat and set aside to cool slightly.
Whisk the egg yolks with the Dijon mustard, garlic, Parmesan cheese, salt, and pepper in a large bowl.
