Ingredients
    For the yellow cream
  • 3 Egg yolks

  • 8.82 ounces Mascarpone cheese (250 grams)
  • 0.56 ounces vanilla sugar (16 grams)
  • 5.07 fluid ounces sweet cream (150 milliliters)
  • For the ganache cream
  • 5.07 fluid ounces sweet cream (150 milliliters)
  • 4.23 ounces cooking chocolate (120 grams)
  • The remaining ingredients
  • 5.07 fluid ounces chilled black coffee (150 milliliters)
  • 1 tablespoon sugar
  • 3.53 ounces ladyfingers (100 grams)
Instructions
    Yellow cream
  1. Combine the egg yolks with the sugar and cook over a double boiler, continuously stirring with a whisk until a thick creamy mixture forms.

  2. Allow the cooked mixture to cool, then add the mascarpone cheese and mix thoroughly.

  3. Whip the sweet cream until stiff peaks form, then fold it into the mixture gently.

  4. Dissolve a tablespoon of sugar in the black coffee.

  5. Ganache cream
  6. Heat the sweet cream until it reaches the boiling point, then pour it over the chocolate pieces and stir until melted. Allow it to cool.

  7. Serving
  8. Prepare six glass cups and pour a little bit of the yellow cream into each.

  9. Soak the ladyfingers in coffee and arrange them over the cream.

  10. Pour a little ganache cream.

  11. Repeat the process until the glasses are filled.
